Testa di Turco

Testa di Turco - Ingredients for 4 people: 350 gr flour 00; 5 eggs; 100 gr of lard; 350 gr fresh sheep's ricotta; sugar; honey.

Preparation: Melt the lard over low heat. Just melted, remove from heat and add the flour  together with the eggs. Knead the mixture. Put the dough in a pastry bag, and create some big puffs that are baked in the oven for half an hour at 180 degrees. In the meantime, mix the ricotta with the sugar in a bowl. In a small saucepan, melt a bit of honey. As soon as the cream puffs are ready, fill them with ricotta cheese and cover with honey. The same compound can 'be fried in oil. Fritters are then passed into the honey that you had warmed up.
