Biscotti alle mandorle
Almond Paste - Ingredients. 300 g peeled almonds; 300 g of sugar; 3 egg whites; 1/2 teaspoon of honey; A few drops of extract of bitter almonds; Vanilla extract; Half cherry for pastry.
Preparation - Peel the almonds, dry them well in the oven, leave to cool and then cut it into flour (alternatively you can use almond flour sold at drugstores). Pour the sugar into a not tinned container of copper and about a third of its weight in water. Place the pan on the fire, making sure not to boil the syrup before the sugar is completely dissolved.
At this point add a few drops of lemon juice and the contents of a tablespoon of liqueur to your liking, then bring to boil, stirring occasionally with a wooden spoon. Now let the syrup cook until, taking a bit between your wet fingers and immersing them in cold water, you will be able to form a lump of sugar.
At this point, remove from the fire bowl, mix in almond flour until you get a homogeneous mixture and then pour it on the marble table or on a board dusted in advance with flour for cakes. After the dough cools, knead until it becomes soft and subtle.
