Pasta alla Norma
Pasta alla Norma - Ingredients for 4 people: 350 gr. short pasta rifled; 500 gr. tomato sauce; 2 medium eggplants; 200 gr. salted ricotta; 3 cloves of garlic; 1 bunch of fresh basil; extra virgin olive oil; salt; pepper.
Preparation - Cut the eggplant into strips and fry them in olive oil with a clove of garlic, drain, add salt and let them rest. For the sauce fry two cloves of garlic in a background of olive oil and pour the pureed tomatoes. Add salt, let the sauce shrink a little and flame out, dip the eggplant, making evreything mix. Set aside the sauce. Bring to a boil a large pot of salted water and cook the pasta in it. Al dente (few minutes) and pour it into the container of the sauce, mix well with a wooden spoon. Complete the dish grating over the salted ricotta, and adding basil and pepper.
